Ginger salmon sashimi

Ingredients for 4 servings:

  • 1 kg salmon fillet(s)
  • 2 tbsp soy sauce, spicy, mild
  • 2 tbsp mirin
  • 1 tbsp, heaped ginger, fresh, grated or squeezed
  • n. B. Sambal Oelek, approx. 1 – 2 used tsp

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Rinse raw salmon fillet under cold water, then pat dry. Cut away the skin with a flexible knife. Remove any dark or greasy bits and pluck any remaining bones. Cut into sashimi-sized pieces and serve. Alternatively, fry the sashimi pieces in a pan on one side, then place raw-side down on a plate. For the sauce, grate or press the fresh ginger and set aside. Add mirin (sweet rice wine) and soy sauce, add about 1-2 teaspoons of sambal oelek (depending on the desired spiciness), and stir well. Serving suggestion: Drizzle the salmon sashimi pieces with the sauce and serve.
