Ingredients for 2 servings:
- 500 g sweet potatoes
- 1 onion(s), red
- 30 g butter
- Sea salt
- Pepper from the mill
- e.g. olive oil
- e.g. Parmesan, grated
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes
Peel the sweet potatoes, cut into small pieces, and boil in salted water until tender. Peel the onion, cut into small pieces, and sauté in a little olive oil until translucent. Mash the softened sweet potatoes and the butter with a potato masher. Season with sea salt and freshly ground pepper. Fold the sautéed onions into the mash. Stir in some grated Parmesan cheese, if desired.
