Ingredients for 2 servings:

  • 3 tbsp olive oil
  • 2 tsp thyme, dried
  • 2 tsp oregano, dried
  • ½ tsp paprika powder, hot
  • 1 garlic clove(s)
  • 2 chicken breast fillets
  • 2 onions
  • 4 peppers, pickled
  • 7 stalks of parsley
  • some salt

Instructions

Working time approx. 10 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

Combine the oil, thyme, oregano, paprika, and garlic in a bowl. Slice the meat crosswise into thin strips, mix with the spices, and marinate for a good 15 minutes. Slice the onions into rings. Slice the pepperoni into rings, removing the stems. Finely chop the parsley. Season the meat with salt and sear it all over in a large pan over high heat. Add the onions and cook for another 5 minutes. Serve the shredded meat with pepperoni rings. We eat the “Low-Carb” gyro with tzatziki or cucumber salad.
