Ingredients for 2 servings:
- 300 g cauliflower, grated
- 1 tsp pepper
- 300 g chicken breast, cut into cubes
- 150 g leek, cut into fine rings
- 150 g carrot(s), finely chopped
- 4 tbsp soy sauce
- 2 eggs
- 3 tbsp sesame seeds
- salt and pepper
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes
Clean the cauliflower and grate or chop it to the size of a grain of rice using a grater or a food processor. Set aside. Brown the chicken breast in a pan, add the leek and carrots and continue to fry briefly while stirring. Add the soy sauce and pepper and fry for about 5 minutes. I don’t think salt is necessary. Add the grated cauliflower and continue to fry for about 2-3 minutes. Push the meat and vegetables to the edge of the pan, leaving a clear space about 10 cm in diameter. Beat the eggs, season with salt and pepper and add to the pan. Stir the egg until it sets and then mix with the vegetables and meat. Season to taste with soy sauce, salt and pepper. Sprinkle with sesame seeds, stir and serve hot. If you don’t like meat, add more vegetables.
