crumbly millet patties with carrots

Ingredients for 2 servings:

  • 100 g millet
  • 250 ml water
  • 1 pinch of salt
  • 20 g hazelnuts, ground
  • 20 g almonds, chopped
  • 25 g soy flour
  • 20 g oat flakes, fine
  • 100 ml soy cream (Soy Cream Cuisine)
  • 1 tbsp parsley, finely chopped
  • Herb salt, to taste
  • Olive oil, for frying
  • 600 g carrot(s), prepared
  • 100 ml water
  • 150 ml soy cream (Soy Cream Cuisine), low-fat
  • 1 tbsp parsley, finely chopped
  • 10 g butter
  • some salt, to taste

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour 5 minutes

vegetarian

Cook the millet in water (with the salt) and let it cool slightly. Add the remaining ingredients and mix well. If necessary, add a little more water or soy flour to create a more malleable mass. Season generously with herb salt. With wet hands, form 12 small patties and fry in olive oil. Grate or finely chop the carrots and steam them in the water until tender. Finally, add the soy cream and butter. Season with a little salt and garnish with parsley.
