Ingredients for 4 servings:

  • 250 g spelt, crushed
  • ½ liter vegetable broth
  • 4 carrots, finely grated
  • 1 onion(s), diced
  • 1 tbsp condensed milk, alternatively quark
  • 1 tsp mustard
  • Salt
  • pepper
  • Basil, dried
  • 50 g cheese, grated
  • Breadcrumbs
  • Fat

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Bring the vegetable stock to a boil, then simmer the ground spelt in it for about 20 minutes (it should be nice and soft). Place the spelt in a sieve to drain the cooking water. Then place the spelt in a mixing bowl and add the grated carrots and finely diced onions. Add the condensed milk, mustard, basil, and grated cheese, and season with salt and pepper. Mix the mixture thoroughly. It should be firm enough to form small dumplings. Roll them in breadcrumbs and fry in a pan over medium heat. Alternatively, you can use quark or egg instead of the condensed milk.
