Sweet potato tofu patties

Ingredients for 4 servings:

  • 600 g sweet potatoes
  • 200g tofu
  • 250 g corn (1 jar/can)
  • 100 g cashew nuts, chopped
  • 50 g chickpeas, ground
  • 2 tsp ginger, freshly grated
  • 1 tsp garam masala
  • Salt
  • possibly chili

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour

Preheat oven to 175°C (top/bottom heat). Cook the quartered sweet potatoes (I steam them) and peel them. Mash the sweet potatoes and tofu finely with a fork. Mix both together with the chickpea flour in a large bowl. Add the corn and cashews and mix well again. Season to taste with ginger, garam masala, salt, and chili powder. Form the mixture into 12 patties and place them on a baking sheet lined with parchment paper. Bake in the hot oven for approximately 40 to 50 minutes, turning the patties every 25 minutes.
