Mushrooms with anchovies on toast

Ingredients for 6 servings:

  • 6 large mushrooms
  • 6 slices of white bread
  • 6 anchovies
  • 2 tbsp butter
  • 2 tbsp sour cream
  • 2 tbsp parsley, chopped
  • possibly pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes

Starter or amuse gueule

Preheat oven to 220°C, using the grill function if possible. Melt butter. Remove the stems from the mushrooms, brush the mushroom caps with butter, and grill in the oven for about 5 minutes until soft. Chop the anchovies and mix with sour cream. Toast the slices of white bread and spread them thinly with butter. Remove the mushrooms from the oven, fill them with the anchovy and cream mixture, and place them on slices of toast. Garnish with parsley, season with pepper if desired, and serve warm. Serve with a fruity, dry white wine.
