Ingredients for 4 servings:
- 1 small iceberg lettuce
- 3 vine tomatoes, ripe and aromatic
- 1 snake cucumber(s)
- 2 spring onions
- 1 small apple, sweet
- 1 lemon(s), the juice
- 150 g shepherd’s cheese
- 150 g low-fat yogurt
- 1 tbsp, heaped sugar
- 1 tsp parsley and chives, freeze-dried or fresh
- e.g. salt and pepper
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes
with refreshing yogurt-lemon dressing
Cut the iceberg lettuce, tomatoes, cucumber, and apple into bite-sized pieces and place them in a large bowl. Finely dice the feta cheese and stir them in. Finely chop the spring onions and drizzle them over the salad. Make a dressing with yogurt, lemon juice, spices, herbs, and sugar and drizzle it over the salad. Stir once, and you’re done.
