Salad of cantaloupe melon, cherry tomatoes and mozzarella

Ingredients for 1 servings:

  • 150 g cherry tomatoes
  • 100 g melon(s) (cantaloupe)
  • ½ onion(s), red
  • ½ cup natural yogurt, mild
  • 1 ball of mozzarella, if desired
  • Raspberry vinegar or red wine vinegar
  • olive oil
  • lemon juice
  • Pepper, coarse
  • Sugar

Dice the melon, tomatoes, and onion and combine in a bowl. Mix the natural yogurt, vinegar, a drizzle of olive oil, and a squeeze of lemon juice to make a dressing. Season to taste with cracked pepper and a pinch of sugar. If desired, toss the salad with a ball of diced mozzarella. These servings are for a small side dish.
