Quick Offal – Hearts and Stomachs

Ingredients for 2 servings:

  • 700 g chicken giblets (half hearts, half stomachs)
  • 4 medium-sized potatoes, floury
  • 2 m.-large onion(s), e.g. red
  • 2 cloves garlic
  • 2 tsp sambal oelek
  • Herbal sea salt, alternatively regular salt
  • pepper
  • oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Chop the onions and garlic. Peel the potatoes and cut them into cubes with sides measuring approximately 0.5–1 cm. Heat the onions and garlic in a pan with oil. Add the diced potatoes. After about 4 minutes, add the giblets and fry, turning frequently. After about 10 minutes, stir in the sambal oelek, salt, and pepper, and fry until the potatoes are tender and the giblets are cooked through. Serve with a crisp salad and a glass of red wine.
