Salsa chicken with sesame potatoes

Ingredients for 4 servings:

  • 2 bottles of sauce (salsa)
  • 400 g cocktail tomatoes
  • 100 g ajvar
  • 1 bunch of spring onions
  • 1 tsp vegetable oil
  • 4 chicken breast fillets
  • 1 can tomato(s) (Pizza tomatoes)
  • 200 ml vegetable stock
  • chili flakes
  • salt and pepper
  • Sweetener or sugar
  • 1 ½ kg jacket potatoes, boiled
  • 50 g sesame seeds (light)
  • 2 tbsp rosemary (chopped)
  • 2 tbsp parsley (chopped)

The day before: Marinate the chicken breast fillet overnight in a jar of ajvar. Heat oil in a pan, sear the marinated meat for about 7 minutes, and season with salt and pepper. For the sauce: Add the halved cocktail tomatoes, the sliced ​​spring onions, and the pizza tomatoes, and mix with the vegetable stock and salsa sauce. Season to taste with chili, salt, pepper, and sugar (or sweetener). For the potatoes: Cut the cooked potatoes into wedges, arrange them on a baking sheet lined with baking paper, and sprinkle with the spices (salt, pepper, rosemary, and sesame seeds). Bake at about 180°C on a medium heat for 20 minutes. Slice the chicken before serving and serve with the sauce and potatoes.
