Ingredients for 1 servings:
- 200 g wholemeal spelt flour
- 100 g oat flakes
- 1 bell pepper(s), red
- 2 small carrots
- 1 small zucchini
- 1 tomato(s)
- 4 eggs, size M
- 100 g light shepherd’s cheese
- 125 g quark
- 1 bunch of chives
- Spice(s) of your choice, e.g. Italian herbs, paprika and salt
- 1 dash of olive oil
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes
with wholemeal spelt flour and oat flakes
Combine the flour and oats in a mixing bowl. Rinse the carrots and zucchini and grate them into the bowl. Chop the tomato, bell pepper, feta cheese, and chives into small pieces. Combine everything in the bowl with the remaining ingredients and mix with a mixer until smooth. Pour the batter into the muffin tin and bake at 200°C (fan oven) for 30 minutes.
