Ingredients for 1 servings:

  • 300 g wheat flour
  • 1 tsp salt
  • ½ tsp rosemary
  • ½ tsp chili flakes
  • 1 packet of dry yeast
  • 150 ml water, lukewarm
  • 150 ml tomato puree
  • 1 garlic clove(s), crushed or finely grated
  • 2 tbsp ketchup
  • 1 tsp paprika powder, hot
  • ½ tsp oregano
  • 1 tbsp olive oil
  • Olive oil for the tray
  • 20 Kalamata olives, halved
  • 20 Pepper, hot, Greek
  • 20 slices of chorizo
  • 10 mushrooms, sliced
  • 20 tbsp Parmesan, grated
  • 1 round loaf(s) of bread for serving
  • 20 wooden skewers

Instructions

Mini pizza on sticks, recipe for 20 pieces

Place the dough ingredients in a bowl, knead with a mixer fitted with a dough hook until smooth, and let rise at room temperature for 20 minutes. Meanwhile, in a small bowl, mix all the sauce ingredients well and add the sliced ​​olives, mushrooms, and chorizo. Preheat the oven to 200 degrees Celsius. Line a large, flat baking sheet with baking paper and brush with a little olive oil. Cut the dough into 20 equal portions, knead each one into a ball, and flatten them. Place the dough pieces in 4 x 5 rows on the baking sheet and let rest for 5 minutes. Spread the sauce among the mini dough pieces, top each with 2 olive halves, 1 slice of chorizo, 2 slices of mushrooms, and a pepperoni, and sprinkle each with 1 tablespoon of grated Parmesan cheese. Bake in the oven for 25-30 minutes. Remove from the oven and let cool, then skewer each piece to make a hedgehog-shaped loaf. Great for buffets and parties.
