Chicory salad with yogurt and mustard dressing

Ingredients for 4 servings:

  • ½ cup sour cream
  • ½ cup yogurt
  • ½ tsp salt
  • 1 tsp honey or agave syrup
  • 1 tsp mustard
  • 1 lemon(s), the juice
  • 1 tsp salad herbs, dried
  • 1 tsp dill
  • 400 g chicory
  • 1 m.-sized apple, red-cheeked
  • 1 orange(s)
  • 1 banana(s)

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Whisk together the sour cream and yogurt, then gradually stir in all the ingredients. Halve the chicory lengthwise. If you don’t like it too bitter, you can soak it in milk first. Cut out the stem. Cut the chicory into wide strips. Dice the apple and banana. Place the chicory, apple, and banana in a bowl and stir in the salad dressing. Slice the orange and garnish the salad with them.
