Ingredients for 4 servings:
- 250 g cherry tomatoes
- 1 melon(s)
- 1 onion(s), red
- 2 small avocados
- 250 g mini mozzarella
- 1 bunch of basil
- 6 sprigs of parsley
- 4 tbsp lemon juice
- 2 tbsp olive oil
- salt and pepper
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Wash the tomatoes, remove the stems, and halve them. Drain the mozzarella, let it drain, and halve the balls. Deseed the melon and form small balls using a melon baller. Peel the onion, halve it, and thinly slice it. Halve the avocado, remove the pit, scoop out the flesh from the skin, cut it into smaller cubes, and immediately drizzle with half the lemon juice. Wash the basil and parsley, spin dry, and roughly chop or tear them. Carefully mix all ingredients in a bowl with the olive oil and the remaining lemon juice. Season with salt and pepper. Serve on plates and garnish with fresh herbs.
