Gnocchi and vegetable casserole

Ingredients for 4 servings:

  • 200 g diced ham
  • 100 g mushrooms
  • 1 can of corn
  • 200 g tomatoes
  • 1 onion(s)
  • 3 garlic cloves
  • 3 tbsp tomato paste
  • 1 tbsp flour
  • 200 ml cream
  • 400 g gnocchi
  • 100g mozzarella
  • 50 g cheese, grated
  • oil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Peel and finely chop the onion and garlic, and fry in a little oil. Wash and finely chop the tomatoes and mushrooms. Add them to the pan with the onions and garlic, along with the corn, tomato paste, and ham. Sprinkle with flour, sauté, deglaze with cream, and simmer for 5 minutes. Mix the gnocchi and the sauce in a baking dish. Finely chop the mozzarella and sprinkle it over the casserole along with the grated cheese. Bake in a preheated oven at 200°C (fan oven) for about 30 minutes.
