Mint jelly with apple juice

Ingredients for 12 servings:

  • 75 g mint leaves, fresh
  • 750 ml apple juice
  • 500 g gelling sugar 2:1
  • 125 ml water

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 8 minutes; Total time approx. 1 hour 38 minutes

Wash fresh mint leaves and pour 125 ml of boiling water over them. Then simmer gently for about 1 hour. Strain the leaves and press out any remaining juice. Bring the resulting mint liquid to a boil with apple juice and gelling sugar and simmer for 4 to 8 minutes. Then pour into the prepared jars.
