Arugula salad with tomatoes and pine nuts

Ingredients for 4 servings:

  • 300 g arugula
  • 500 g tomatoes
  • 1 piece(s) Parmesan
  • some balsamic vinegar
  • 100 g pine nuts

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

fast and good

Wash the arugula and remove the stems, then divide it among 4 plates. Wash and dice the tomatoes, and arrange them on top of the arugula. Drizzle with balsamic vinegar. Briefly toast the pine nuts in a dry pan and sprinkle over the salad. Thinly shave the Parmesan cheese over the top and serve. Ciabatta with Italian herbs goes well with this.
