Ingredients for 4 servings:
- 400 g celery
- 80 g Parmesan cheese
- 4 tbsp wine vinegar or apple cider vinegar
- 6 tbsp olive oil
- 2 spring onions
Instructions
Working time approx. 5 minutes; Rest time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes
with Parmesan
Wash the celery and cut into 1-2 mm thin slices. Wash the spring onions and slice the white parts into approximately 5 mm wide rings. Place everything in a salad bowl, grate the Parmesan cheese over the top, season lightly with salt, and add the vinegar and oil. Let it rest for 5 minutes so the salt draws some of the water out of the celery and the salad becomes juicier. Finally, season to taste with salt and pepper. Be careful with the salt; the Parmesan cheese usually makes it quite salty.
