Spelt patties with vegetables

Ingredients for 3 servings:

  • ½ liter vegetable broth
  • 3 spring onions
  • 1 egg(s)
  • 1 bunch of parsley
  • 200 g spelt flakes
  • 1 carrot(s)
  • salt and pepper
  • bell pepper(s)

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Meat-free, also for vegetarians

Bring the vegetable stock to a boil, add the spelt flakes, remove the pan from the heat and wait 10 minutes. Finely grate the carrot, finely chop the spring onions and bell pepper, chop the parsley and place in a bowl. Now put the pan back on the heat and heat again, stirring constantly until the liquid has almost completely evaporated. Remove the pan from the heat and let the contents cool. Then add to the bowl with the vegetables. Mix well with the egg and seasoning. If the mixture is not firm enough, add breadcrumbs. Heat a pan over medium heat and add a little fat. Now form the mixture into patties about 1 cm thick and place in the pan. Fry for about 5 minutes on each side. Only turn them over after this time, otherwise they will easily fall apart.
