Spelt bread with oats

Ingredients for 1 servings:

  • 750 g spelt flour (half wholemeal, half type 630)
  • 100 g flaxseed
  • 100 g oat flakes
  • ½ liter of warm water
  • 1 tbsp salt
  • 1 tbsp honey
  • 1 cube of yeast

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

First mix the flour with the linseed and the oats, then add the salt. Dissolve the yeast completely in the warm water and add to the flour. Then add the honey and mix everything thoroughly with a dough hook. Leave the dough to rise in a warm place for about 30 minutes, covered with a cloth. Then knead the dough again well with floured hands and place it in a 30 cm loaf tin, or shape it into a loaf and let it rise, covered, for another 20-25 minutes. Preheat the oven (fan oven) to 210 degrees Celsius and bake the dough for 10 minutes at this temperature, then turn the oven down to 180 degrees Celsius and bake for another 60-65 minutes.
