Apple-carrot multigrain bread

Ingredients for 1 servings:

  • 1 kg spelt flour
  • 150 g flaxseed
  • 100 g sunflower seeds
  • 50 g sesame seeds
  • 50 g pumpkin seeds
  • 3 tsp salt
  • 4 tbsp fruit vinegar
  • 1 cube of yeast
  • 1 tsp honey
  • 700 ml water
  • 200 g carrot(s), grated
  • 300 g apples, grated
  • Grease for the molds

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 10 minutes

Combine the flour, seeds, and salt in a mixing bowl. Mash the yeast with the honey in a cup; the mixture will become liquid! Add the honey-yeast mixture to the flour and seeds mixture, along with the water and vinegar. Knead vigorously with a mixer or food processor. Add the grated apples and carrots and knead again. Pour the dough into two greased loaf pans. Place the pans in a cold oven and bake at 180-200 degrees Celsius for about 1 hour. After 10 minutes of baking, make a slit lengthwise down the middle.
