Ingredients for 1 servings:
- 600 g apples, grated
- 100 g raisins
- 3 tbsp rum
- 1 tbsp lemon juice
- 1 tbsp cinnamon
- 2 tbsp cane sugar
- 315 g wholemeal spelt flour
- 35 g linseed flour, alternatively more wholemeal spelt flour
- 1 packet of baking powder
- 1 pinch of salt
- 100 g mixed nuts (almonds, hazelnuts, walnuts, macadamia nuts, cashews, etc.)
- Fat for the mold
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 15 minutes

Wash the apples and grate them with the peel. Immediately toss with lemon juice. Then add the rum, raisins, cinnamon, and brown sugar and mix everything well. Add the flour, baking powder, and salt and knead everything into a dough. Finally, knead in the nuts. Pour the dough into a greased loaf pan. Bake in a preheated oven at 180°C (top/bottom heat) for 50-60 minutes. Check the cake occasionally to make sure it’s not getting too brown and cover with aluminum foil if necessary. It tastes delicious fresh from the oven, but also if it sits for a few days.
