Ingredients for 1 servings:
- 475 g wholemeal spelt flour
- 225 g wheat flour type 405
- 35 g chia seeds
- 15 g salt
- 475 g water, lukewarm
- 25 g fresh yeast
- 50 g wild garlic, fresh
- some butter or margarine for the mold
- some water for brushing
- Fat for the mold
- e.g. oat flakes or spelt flakes for sprinkling
Instructions
Working time approx. 10 minutes; Rest time approx. 1 hour 5 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 2 hours 5 minutes
Wash and finely chop the wild garlic. Weigh the two types of flour, the chia seeds, and the salt into a mixing bowl. Make a well in the center and add 1/3 of the lukewarm water. Crumble in the fresh yeast, stir gently, and let it rise for 15 minutes. Then add the remaining water and knead everything for 10 minutes. Add the wild garlic and stir again to ensure it is evenly distributed throughout the dough. Cover with a cloth and let it rise for 30 minutes. Grease a loaf pan and pour in the dough. Brush the top with water and sprinkle with the oat or spelt flakes. Cover with a cloth and let it rise for another 15 minutes. Meanwhile, preheat the oven to 200°C (top/bottom heat). Place a heatproof bowl of water on the bottom of the oven. Once the temperature is reached, insert the loaf pan and bake the bread for 50 minutes.
