Low-carb crackers from the waffle iron

Ingredients for 1 servings:

  • 25 g golden linseed
  • 15 g pumpkin seeds
  • 20 g sunflower seeds
  • 15 g chia seeds
  • 2 pinches of salt
  • 100 g water

Instructions

Working time approx. 5 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Place all ingredients, except salt and water, in a blender and process until finely ground. Then add salt and water and mix well. Let the mixture stand for 15 minutes. Preheat a waffle iron for thin waffles. I used a cone-shaped waffle iron, but it will also work in a cinnamon waffle iron. Place 1 heaped teaspoon of the mixture into the center of the heated waffle iron and cook each cracker for about 3 to 4 minutes until crispy. Then let it cool on a wire rack. Tips for best results: The crackers taste best fresh, slightly warm and crispy straight from the waffle iron. If there are any leftovers, briefly place them in the toaster over low heat. A blender with a 2-part blade is suitable for chopping. Alternatively, you can use a coffee grinder with a blade, an immersion blender, or a food processor. If using a cinnamon waffle iron, add approximately 1/2 to 2/3 teaspoon of mixture to each section of the waffle iron.
