Vegan tarte flambée

Ingredients for 1 servings:

  • 500 g wholemeal spelt flour
  • 250 ml water
  • 4 tbsp olive oil
  • some salt
  • 6 large slices of pumpkin
  • 1 stalk(s) leek
  • 2 bell peppers
  • 1 jar tomatoes, dried in oil
  • 1 small can of chickpeas
  • 1 cup soy yogurt (yogurt alternative)
  • e.g. salt and pepper
  • e.g. parsley, chopped
  • e.g. garlic powder
  • 1 handful of yeast flakes

Instructions

Working time approx. 35 minutes; Cooking/baking time approx. 18 minutes; Total time approx. 53 minutes

Knead the flour, oil, salt, and water into a dough. Drain the tomatoes and chickpeas and chop the vegetables. Mix the soy yogurt with the spices and nutritional yeast to make a sauce. Preheat the oven to 200°C (top/bottom heat). Roll out the dough on a baking sheet and spread with some of the sauce, then top with the ingredients. Bake the tarte flambée in the hot oven on the bottom rack for approximately 15-18 minutes. Serve with the remaining sauce as a topping.
