Asparagus and ham rolls

Ingredients for 4 servings:

  • 200 g asparagus, green
  • 200 g asparagus, white
  • 250 g cooked ham, cut into thin slices
  • 50 g lettuce
  • 2 tbsp vinegar
  • 2 tbsp olive oil
  • 1 tomato(s)
  • Parsley
  • Salt
  • 1 dash of lemon juice, for cooking the asparagus

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

with a light vinaigrette

Trim the fibrous ends of the asparagus. Peel the asparagus and cook it in water with salt and lemon until al dente. Rinse the asparagus with cold water. Wrap each asparagus spear in a slice of ham. Make a vinaigrette with vinegar, oil, and salt and drizzle it over the asparagus. Wash the lettuce and tomato and arrange them on a plate. Drizzle with the dressing and place the asparagus and ham rolls on top. Garnish with parsley and serve.
