Ingredients for 20 servings:

  • 350 g flour
  • 3 eggs
  • ½ pack of baking powder
  • 6 tbsp oil
  • ¼ liter of milk
  • salt and pepper
  • spice(s) as desired
  • ½ zucchini
  • 200 g feta cheese
  • 250 g bacon, diced
  • n. B. cheese, grated

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Meal prep, quick and easy

Mix flour, eggs, baking powder, oil, and milk into a smooth muffin batter. Finely chop the zucchini and feta. Stir both into the muffin batter along with the bacon bits. Season with salt and pepper. Add other seasonings if desired. Fill the batter into muffin cups and sprinkle with grated cheese, if desired. Bake at 180°C for about 25 minutes. When the muffins are done, the batter will still be a bit slippery due to the cheese. Once the muffins have cooled, the batter will firm up. However, don’t leave them in the oven for too short a time; bake for a few minutes longer.
