Smoked tofu sandwich with lettuce and tomatoes

Ingredients for 2 servings:

  • 4 slices of sandwich toast
  • 1 large tomato(s)
  • 1 small head of romaine lettuce, alternatively lettuce
  • 150 g smoked tofu
  • Vegetable margarine
  • vegetable oil
  • Paprika powder, sweet
  • Salt and pepper, freshly ground
  • e.g. chili flakes

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

Here’s my vegan alternative to the BLT sandwich (Bacon, Lettuce, Tomatoes). First, clean, wash, and thoroughly dry the lettuce. Press in the white stems so the lettuce lies flatter on the toast. Then, wash and slice the tomato. Cut the smoked tofu into long slices. I need two slices per sandwich. Meanwhile, heat the vegetable oil in a small pan and toast the toast. Then spread a thin layer of vegetable margarine on both sides of the toast. When the pan is hot enough, add the smoked tofu slices and fry on both sides until crispy. While the tofu is cooking, spread the lettuce on one half of the toast. Then, remove the tofu from the pan and place it on top, then top with tomato slices. Now season with paprika, salt, fresh pepper, and chili flakes, if desired. Fold the slices closed and gently press the sandwich together. Enjoy!
