Simple jackfruit sandwich

Ingredients for 1 servings:

  • 1 can Jackfruit, 225 g drained weight
  • 4 tbsp vegetable oil
  • 2 tbsp Italian herbs
  • 1 tbsp tomato paste
  • ½ tsp pepper
  • 1 garlic clove(s)
  • some cooking oil
  • n. B. Bread(s) (e.g. toast, rolls, wholemeal bread)
  • some salad
  • some cucumber(s)
  • 1 small tomato(s)
  • some cheese substitute

Instructions

Working time approx. 20 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 45 minutes

Drain the jackfruit and rinse under cold water. Tear the jackfruit into small pieces using your hands or two forks. Mix the vegetable oil, herbs, tomato paste, pepper and garlic in a bowl to make a marinade. Add the pulled jackfruit to the marinade. Stir until all the pieces are coated with the marinade and let it sit for at least 15 minutes. Add a little cooking oil to a non-stick pan and heat over medium heat. Add the marinated jackfruit. Fry everything for about 7-10 minutes, stirring occasionally. Meanwhile, wash the lettuce. Slice the tomato and cucumber. Toast the bread on both sides in a pan without oil. Once the first side is toasted, turn the bread over and place the cheese slice on one half and let it soften for the remaining time. Build the sandwich by placing the cucumber and tomato slices on the cheese-covered bottom. Sprinkle with the jackfruit and – if desired – a pinch of salt and pepper. Top with some lettuce and the other half of the bread. Note: The sandwich is served with e.g. B. a few pickled cucumbers or dried tomatoes, of course, can be changed as desired.
