Bruschetta with zucchini

Ingredients for 2 servings:

  • 2 slices of brown bread
  • 2 m.-large zucchini
  • 2 small onions
  • 1 large garlic clove(s)
  • e.g. olive oil
  • e.g. salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

vegetarian

Wash the zucchini and cut into fairly large cubes. Peel the onions and slice them into thin rings. Fry them thoroughly in a pan with olive oil and season with salt and pepper. Toast the bread slices, if desired, and rub them generously with the peeled garlic clove. Spread the hot zucchini mixture on top and serve immediately.
