Colorful leaf salad with peaches

Ingredients for 4 servings:

  • 60 g pine nuts
  • 1 large leaf lettuce (e.g. romaine)
  • 500 g peach(s) (yellow-fleshed, ripe and aromatic)
  • ½ bunch of spring onions
  • 300 g cherry tomatoes or vine tomatoes
  • 200 g mini mozzarella
  • 6 tbsp olive oil
  • 2 tbsp vinegar (orange peel flavored balsamic bianco) or other fruity
  • 1 tbsp water
  • 1 tsp, heaped honey, creamy
  • e.g. sea salt and pepper
  • some cream of balsamic vinegar

delicious vegetarian summer salad

Toast the pine nuts in a pan without any fat and set aside. Wash the lettuce, peaches, spring onions, and tomatoes and dry thoroughly. Cut everything into bite-sized pieces and place in a large salad bowl. Drain the mozzarella and, if not using mini mozzarella, chop it up and add it to the salad. Add the pine nuts as well. For the dressing, mix all the ingredients together, season to taste, and drizzle over the salad. Finish with a little balsamic vinegar. If you want to bring the salad to a garden party, for example, mix the dressing in a screw-top jar, take it separately from the salad, and pour it over the salad just before eating. This will keep the salad crisp.
