Juicy millet patties

Ingredients for 3 servings:

  • 1 cup millet
  • 2 cups water
  • some vegetable broth
  • some parsley
  • 1 clove(s) garlic
  • salt and pepper
  • Galangal
  • Oil for frying

Instructions

Working time approx. 30 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour

Wash the millet and bring to a boil with water and vegetable stock, then cook for about five minutes. Let it swell for another ten minutes, then let it cool. Finely chop the garlic clove and parsley and add to the millet. Season the mixture with salt, pepper, and galangal and form about 13 patties. Fry the patties in hot oil until golden brown on both sides. Serve with tzatziki, herb curd, Greek farmer’s salad, or raw carrots.
