Rice patties

Ingredients for 9 servings:

  • 160 g brown rice
  • 200 g “Cheshire Style Cheese” *
  • 20 black olives in/out of brine
  • 100 g bell pepper, frozen cut into strips
  • 50 g leek, frozen
  • 1 pinch(s) of sugar
  • 1 tsp herbal salt
  • 100 g buckwheat, ground, for binding
  • 10 peppercorns, grind
  • Olive oil, for frying

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cook the rice. Coarsely grate the Cheshire-style cheese and place it in a large bowl. Add the cooked brown rice, finely chopped black olives, frozen bell pepper strips, frozen leeks, sugar, salt, ground buckwheat, and pepper. Mix everything well. (It will stick.) With wet hands, form flat patties in hot oil. Reduce the heat to low and fry on both sides. *Note: This “cheese” is gluten-free, lactose-free, and vegan. It is certified organic and is made in Scotland. My own recipe.
