Ingredients for 8 servings:
- 220 g sesame seeds
- ½ coconut
- 1 tbsp oil (coconut oil)
- 1 tbsp cinnamon powder
- 6 dates
- 8 prunes
- e.g. water or nut milk
- e.g. thick juice (agave syrup)

Halve the coconut and reserve the liquid in a bowl as an ingredient for the cookies. Grind the coconut flesh from one half and add it to the bowl. Grind most of the sesame seeds and add them to the bowl. Leave a handful unground and add it as is. Pit the dates and prunes, chop them as finely as possible, and stir them in with the coconut oil. Knead the mixture thoroughly by hand. Sweeten with a little agave syrup if desired. If the mixture isn’t yet dough-like, add a little more nut milk or water. Cover the dough and let it stand for 2 hours. Flatten the dough with your hands and cut out shapes. Place the cookies on special dehydrator foil and then dry in the dehydrator at 42°C for about 9 hours. Of course, the cookies can also be made in the oven; in that case, set the temperature as low as possible (most modern ovens can be set to 50°C). The cookies should not be baked, just dried.
