Carrot and apple waffles

Ingredients for 3 servings:

  • 3 carrots
  • 2 apples
  • 1 tbsp oat flakes
  • ½ cup tea (fennel tea)
  • ½ cup apple juice, mild, vegan
  • 1 tbsp rye meal
  • 3 tbsp rye flour
  • 4 tbsp wheat flour
  • ¼ cup rapeseed oil
  • 1 packet of baking powder
  • 1 tsp salt
  • 2 tbsp cane sugar or stevia

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 25 minutes

Finely grate the carrots and apples and mix with the rapeseed oil. Then fold in the rye flour, rye bran, and oat flakes. Add the apple juice and fennel tea. Mix the baking powder into the wheat flour and add it to the batter. Season the batter with salt and sugar. Bake in the waffle iron for about 5-10 minutes, depending on the desired browning. If the batter sticks to the waffle iron, stir in more wheat flour and a little more oil, if necessary. This recipe is delicious and a healthy alternative to egg waffles for kids.
