Ingredients for 4 servings:

  • 400 g potatoes
  • 400 g broad beans
  • 3 onions
  • 3 cloves garlic
  • e.g. rosemary
  • e.g. parsley
  • 200 g bacon cubes
  • some salt and pepper
  • e.g. lemon juice
  • e.g. olive oil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

great for grilling

Cut the potatoes into wedges and arrange them on a baking sheet. Drizzle with olive oil and season with salt and pepper. Bake at 180°C fan-assisted oven until golden brown. Meanwhile, wash the broad beans and blanch them until al dente. Slice the onions and fry with the bacon. Finely chop the herbs. When the potatoes are done, transfer everything to a bowl. Crush the garlic, sprinkle over the herbs, and season with lemon juice, salt, and pepper. Add a little more olive oil, if desired.
