Ingredients for 1 servings:
- 1 large plum(s), blue
- 1 tbsp Amaretto
- ½ tsp cinnamon sugar possibly with xylitol
- e.g. goat cheese (goat roll, cream cheese or Camembert)
- Toast or low-carb bread
- Cheese substitute (Simply V, vegan cream cheese substitute), optional
Instructions
Working time approx. 5 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes
Low carb and vegan possible, also great as a starter, also possible with cow’s milk cheese
Take the cheese (can also be cow’s milk cheese) out of the refrigerator to allow it to warm up a bit. Wash and pit the plum (not damson). Cut it into small pieces and place it in a saucepan. Mix in the Amaretto and cinnamon sugar. Let it rest for 10 minutes. Then simmer gently for about 5 minutes, stirring occasionally. In the meantime, prepare the bread, toasting it if necessary. Spread the cheese on top and pour the plum compote on top. It can be served warm or cold. It also tastes great without bread (with goat’s cheese), as a starter. Vegans can use Simply V plain. Strict low-carb eaters can replace the Amaretto with water. It’s also great on leaf salad. It also tastes delicious warm. Then briefly place the bread and cheese in the oven.
