Ingredients for 4 servings:
- 8 slices of wholemeal toast
- 1 kg zucchini
- 1 garlic clove(s)
- 2 tsp herbs de Provence
- salt and pepper
- 120 g sheep’s cheese
Instructions

Toast the slices of bread and place them on a baking sheet lined with baking foil. Grate the zucchini, sauté them with the crushed garlic clove until completely dry, and season with herbs, salt, and pepper. Layer the vegetables on the slices of bread in mounds, sprinkle with crumbled feta cheese, and bake in a preheated oven on the middle rack at 200°C (gas mark 3) for about 10 minutes. Tip: This goes very well with a fresh tomato salad.
