Ingredients
for the paprika sauce
- 1 size Onion
- 2 Red Bell pepper
- 1 yellow Bell pepper
- 5 tbsp Olive oil
- 3 tsp Mild paprika powder
- 0,5 tsp Hot paprika powder
- 2 tbsp Tomato paste
- 400 ml Vegetable broth
- 1 tsp Sugar
- Salt pepper
for the vegetable noodles
- 1 medium sized Zucchini
- 3 Carrots
- 1 tbsp Olive oil
- 2 Onions
- 2 Garlic cloves
- 0,5 tsp Thyme
- Salt pepper
Instructions
- Peel the onion and dice finely
- Peel and chop the bell peppers.
- Roast both briefly in oil and roast a little more.
- Pour the stock and stir well.
- Add the paprika powder, tomato paste, salt, pepper and sugar and simmer for about 10 minutes.
- Season again to taste and possibly puree a little.
- Process the carrots and zucchini into pasta with the spiral cutter.
- Finely chop the onion and garlic.
- Then briefly sweat all the ingredients in oil.
- Season with salt and pepper and toss well.
- Place the paprika sauce on a plate as a mirror, spread the vegetable noodles on top and enjoy.
- We had a piece of cod fillet with it.
