Paprika Sauce with Vegetable Noodles

Ingredients
 

for the paprika sauce

  • 1 size Onion
  • 2 Red Bell pepper
  • 1 yellow Bell pepper
  • 5 tbsp Olive oil
  • 3 tsp Mild paprika powder
  • 0,5 tsp Hot paprika powder
  • 2 tbsp Tomato paste
  • 400 ml Vegetable broth
  • 1 tsp Sugar
  • Salt pepper

for the vegetable noodles

  • 1 medium sized Zucchini
  • 3 Carrots
  • 1 tbsp Olive oil
  • 2 Onions
  • 2 Garlic cloves
  • 0,5 tsp Thyme
  • Salt pepper

Instructions
 

  • Peel the onion and dice finely
  • Peel and chop the bell peppers.
  • Roast both briefly in oil and roast a little more.
  • Pour the stock and stir well.
  • Add the paprika powder, tomato paste, salt, pepper and sugar and simmer for about 10 minutes.
  • Season again to taste and possibly puree a little.
  • Process the carrots and zucchini into pasta with the spiral cutter.
  • Finely chop the onion and garlic.
  • Then briefly sweat all the ingredients in oil.
  • Season with salt and pepper and toss well.
  • Place the paprika sauce on a plate as a mirror, spread the vegetable noodles on top and enjoy.
  • We had a piece of cod fillet with it.
