Paprika Sauce with Vegetable Noodles

The perfect paprika sauce with vegetable noodles recipe with a picture and simple step-by-step instructions.

for the paprika sauce

  • 1 size Onion
  • 2 Red Bell pepper
  • 1 yellow Bell pepper
  • 5 tbsp Olive oil
  • 3 tsp Mild paprika powder
  • 0,5 tsp Hot paprika powder
  • 2 tbsp Tomato paste
  • 400 ml Vegetable broth
  • 1 tsp Sugar
  • Salt pepper

for the vegetable noodles

  • 1 medium sized Zucchini
  • 3 Carrots
  • 1 tbsp Olive oil
  • 2 Onions
  • 2 Garlic cloves
  • 0,5 tsp Thyme
  • Salt pepper
  1. Peel the onion and dice finely
  2. Peel and chop the bell peppers.
  3. Roast both briefly in oil and roast a little more.
  4. Pour the stock and stir well.
  5. Add the paprika powder, tomato paste, salt, pepper and sugar and simmer for about 10 minutes.
  6. Season again to taste and possibly puree a little.
  7. Process the carrots and zucchini into pasta with the spiral cutter.
  8. Finely chop the onion and garlic.
  9. Then briefly sweat all the ingredients in oil.
  10. Season with salt and pepper and toss well.
  11. Place the paprika sauce on a plate as a mirror, spread the vegetable noodles on top and enjoy.
  12. We had a piece of cod fillet with it.
