Baked potatoes with olive oil and herb butter

Ingredients for 1 servings:

  • 2 small potatoes
  • 1 tbsp olive oil
  • ½ tbsp herb butter
  • 1 shallot(s)
  • 1 garlic clove(s)
  • n. B. herbs, fresh
  • salt and pepper
  • aluminum foil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Wash and quarter the potatoes—leave the skin on—and place them in the center of the aluminum foil. The foil should be large enough to tie a small parcel. Season the potatoes with salt and pepper. Drizzle with oil and butter. Slice the shallot into rings, and mash the garlic clove with a knife. Add the shallots and garlic with the herbs and seal the foil to form a parcel. Place the parcel in the embers while grilling and it will be ready after about 15 minutes. Cooking time varies depending on the size of the potato.
