Ingredients for 1 servings:

  • 300 g whole wheat flour
  • 200 g wheat flour, type 550
  • 320 ml water, warm
  • 70 g chia seeds
  • 12 g salt
  • ½ cube of yeast, fresh or 1 sachet of dry yeast

Instructions

Working time approx. 15 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 45 minutes

Weigh all ingredients in a bowl and knead for about 10 minutes. The dough should pull away from the sides of the bowl but still be slightly sticky. Grease a bread pan or loaf pan, shape the dough into an oblong shape, place it in the pan and press it down lightly. Cover the pan with foil or a damp cloth and let it rise for about 30 minutes. Preheat the oven to 200°C. Place the oven rack on the second rack from the bottom. When the dough has finished rising, cut a slit lengthwise, brush with water and bake for 45-60 minutes. After 45 minutes, remove the bread from the pan. If the sides are still very light, return the bread to the oven without the pan for the remaining time. Tip: You can also add a few tablespoons of linseed and buckwheat to the dough.
