Curd and apricot dumplings

Ingredients for 5 servings:

  • 500 g low-fat quark (low-fat curd cheese)
  • 2 tbsp butter or coconut oil
  • 6 tbsp whole wheat semolina or kamut semolina
  • 1 tsp salt
  • n. B. Flour
  • 10 apricots, pitted
  • e.g. breadcrumbs or ground nuts
  • possibly desiccated coconut
  • 1 tbsp cane sugar
  • 1 pinch of cinnamon

Instructions

Working time approx. 30 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 10 minutes

Mix together low-fat curd cheese, butter or coconut oil, semolina, salt, and flour. Add enough flour to achieve a formable consistency. Let the dough rest for about 30 minutes. Divide the dough into 10 portions and roll the apricots in them. Meanwhile, bring a pot of water to a boil. Simmer the dumplings gently for about 8 minutes, or until they float to the top. For the crumbs, mix the breadcrumbs or nuts with sugar, cinnamon, and desiccated coconut, if using, and lightly toast in a pan. Toss the dumplings in the crumbs.
