- some lemon juice
- 1 pinch(s) of sugar
- salt and pepper

Peel the cucumber, halve it, and scoop out the seeds with a spoon if desired. Slice or dice the cucumber. Shred the mozzarella. For the dressing, combine the ingredients and season to taste. Combine the cucumber, mozzarella, olives, and dressing in a bowl and let it chill in the refrigerator before serving.
