Ingredients for 4 servings:
- 2 eggs
- 1 shallot(s)
- 4 tbsp oil
- 1 tsp mustard
- 2 tsp lemon juice
- 1 tbsp chives, in rolls
- 1 tbsp Dill, chopped
- 1 head of lettuce
- salt and pepper
Instructions
Working time approx. 25 minutes; Total time approx. 25 minutes
Pierce the eggs and boil them hard for 10 minutes. Cool them in cold water, ideally, and then peel them. Separate the egg whites and yolks. Finely dice the egg whites and shallots. Pass the egg yolks through a fine sieve. Mix with 100 ml water, oil, mustard, lemon juice, a little salt, and pepper. Stir in the chives and dill. Trim and wash the lettuce, spin dry, and tear into bite-sized pieces. Drizzle with the dressing and serve sprinkled with egg white cubes and shallots.
