Barley groats as a side dish

Ingredients for 1 servings:

  • 400 ml vegetable juice, e.g. tomato-vegetable mix
  • 1 tsp vegetable broth, instant
  • 100 g barley groats
  • 1 vegetable onion(s) or 2 spring onions
  • ½ tsp herbal salt
  • 1 pinch of white pepper
  • 1 tbsp herbs, dried

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Oat groats also work

Heat the vegetable juice, stir in the instant vegetable broth, and drizzle in the barley groats. Finely dice the vegetables, add them, and cook. Simmer the barley over low heat for about 15-20 minutes. Stir occasionally. Add the spices and herbs, stir in, and season to taste. Serve with baked feta, fried, pickled tofu, or fish fillet. It also tastes great with a green salad. Once cooled, this side dish can also be served as a salad, for example, with vinegar, oil, and cheese cubes. The flavor varies depending on the type of vegetable juice.
