Ingredients for 1 servings:

  • 50 g butter
  • 50 g flour
  • 200 ml milk
  • 300 ml beef broth
  • 600 ml vegetable stock
  • 100 g cooked cheese, more if desired
  • salt and pepper
  • Nutmeg, freshly grated

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Prepare the warm broth by combining beef broth with vegetable broth and heating. Make a roux from the butter and flour and sauté briefly. While stirring, add the milk first, then the broth, and bring to a boil. No lumps should form. Once the resulting sauce is thoroughly heated and the flour taste has disappeared, add the cheese and stir in. Then add enough of the remaining broth until the desired consistency is reached. Season to taste with nutmeg, salt, and pepper.
