Smoked tofu burger

Ingredients for 2 servings:

  • 50 g smoked tofu
  • 50 g natural cream cheese
  • 4 slice(s) of eggplant(s) (approx. 0.5 cm thick)
  • 1 tomato(s)
  • 2 rolls (wholemeal spelt rolls)
  • olive oil
  • Salt and pepper from the mill
  • 4 leaves of basil, fresh

Working time approx. 30 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 35 minutes

First, salt the eggplant slices and let them sit. In the meantime, chop the tomato very finely, season with salt, freshly ground pepper, the finely torn basil leaves, and a little olive oil. Halve the rolls and spread the cream cheese on both halves. Cut the tofu into thin slices. Pat the eggplant slices dry with kitchen paper. Heat a little olive oil in a pan and fry the eggplant slices until golden brown. Then let them cool. On the bottom half of the roll, place first an eggplant slice, then the smoked tofu, and finally some tomato salad (let it drain a little). Then place the second eggplant slice and the top of the roll on top.
